SALSA WHEAT BERRY SOUP

Dear Cozette shared this recipe for a yummy soup that uses the mango and peach salsa sold at Costco.

Besides the fact that I’m always looking for simple and delicious ways to serve more wheat berries to my family, I especially wanted to prepare and share this soup with my nephew. You see, Steve was diagnosed with Leukemia about four months ago. My sister, Carolyn, is doing everything she can to help him eat healthy food and WHEAT has been suggested by his doctors.

Fresh Ingredients

2 lbs. cooked diced chicken breasts (or) four cans (12.5 oz. each) canned chicken breast

Storage Ingredients

Combine in a large soup pot and simmer 10 minutes:

1 (48 oz.) Mango Salsa with Peach

1 (14.4 oz.) can diced tomatoes

3 Tablespoons olive oil

Add:

2 lbs. cooked diced chicken breasts (or) four cans (12.5 oz.) canned chicken breast

2 (14 oz.) cans chicken broth

1 quart chicken stock or water with chicken bouillon or chicken base

1 1/4 teaspoons cumin

2 (11 oz.) cans of drained corn or equivalent frozen corn

2 cups cooked whole wheat berries

Simmer for 15 minutes. Pour into soup bowls over broken tortilla chips. Garnish with sour cream, grated cheese, avocado pieces, fresh lime juice, cilantro leaves, olives. Go wild!

    Where do you find the salsa at Costco, is it in the refrigerated section of the deli or on a shelf somewhere? I think I should give this a try. Second question, about how much does it make (how many will it serve)?

    p.s. do you think your yummy bean recipe from one of your last posts would work with black bean?

    Good morning Kristine! The Costco mango salsa is found in the refrigerated deli section, and plan on a big recipe. Probably feeds 10 or 12. And yes, you could for sure use black beans when you make perfect pintos. Beans are our friends!

    Tonight I served black beans over rice with pico de gallo for a family get together. I made the black beans with the spices like you have on your perfect pinto blog…very yummy!! You can bet I’ll be making them like that from now on ;) Thanks!!

    Well missy, I’ll have you know that tonight I served YOUR Zesty Wheat Berry and Black Bean Chili and it was a happy success!

    I think I’ve mentioned before that we have this family tradition of sharing our Sunday dinner with friends. So today, when our guests arrived, the mother mentioned that her adult daughter was vegetarian. SCORE! I was so happy to have prepared an entirely vegetarian meal: Zesty Wheat Berry and Black Beans Chili, corn muffins, and a spinach salad with cabbage, grapes, pears, and pecans.

    Before we asked a blessing on the food, I warned everyone that if they haven’t already been eating healthy food, as in getting enough fiber in their diets, they would soon be wishing they had been!

    Sounds very yummy, I’m glad it was a success!!! With the cold weather coming again on thursday I may be making it this week. I love this soup because it makes you feel all warm inside, literally! You are so wonderful to keep such a great sunday tradition going. You go girl ;)
