CARROT CAKE COOKIES

I needed to bake 10 dozen cookies today. I KNOW! Only thing I don’t like cooking more than cookies…is candy. I’m not even sure if I’ve ever actually tried to make candy, but it seems dangerous…all that boiling sugar like molten lava on the stove. Gives me the heebie-jeebies just thinking about it. Maybe I’m remembering some caramel sauce that I overcooked. That probably doesn’t count as candy but it was still a BAD experience.

So! When I was thinking about the  T*E*N*D*O*Z*E*N*C*O*O*K*I*E*S   I first had to find a good recipe. After a bit of online searching, something from Martha Stewart seemed like a safe bet. Her Carrot Cake Sandwich Cookies call for regular rolled oats (from food storage). Even though I used fresh shredded carrots for today’s big bake-off, I’m sure that dehydrated carrots (from food storage) would work just as well once they’ve been reconstituted and ground up into tiny bits.

Besides wanting to use more of the dry staples that I always have on hand, I chose this recipe because one of the reviewers mentioned that the cookies taste best when chilled for a few days. Ding! Ding! Ding! It took me the entire afternoon to prepare a double batch but now I have all the cookies I need for this coming Saturday. 3 dozen are going to help out at a bridal shower in the morning and the other 7 dozen are for a multi-stake missionary fireside that same evening. The main thing is that they’re done. They look nice, they’re easy to stack and store, and the flavor of nummy carrot cake with cream cheese frosting is pretty terrific. I love being able to use my long-term food storage in normal recipes!

    In all reality didn’t you really make 240 cookies? If each is a sandwich and you made 10 dozen and I’m doing my math correctly…You are one crazy lady!! Gotta love ya!!

    240 IS RIGHT! I can’t believe I did that. Probably more cookies than I’ve made in my whole life. And with my track record, you can bet I was praaaaaying that they would turn out.
