WHEAT BERRY SALAD WITH TART DRIED CHERRIES AND WALNUTS

Fresh Ingredients

2 cups cooked diced chicken *optional

2 green onions, sliced

1/2 cup fresh parsley, chopped

Storage Ingredients

2 cups cooked wheat berries

3/4 cup chopped and toasted walnuts

2 stalks celery, diced

1/2 cup tart dried cherries, diced

3 tablespoons olive oil

2 tablespoons lemon juice

salt and pepper to taste

Whisk the olive oil, lemon juice and salt and pepper together, set aside. Mix everything else together and toss with the olive oil mixture. ***The flavors in this salad really blend and taste so much better when prepared a day ahead of time. Also, you may want to consider adding 2 cups of cooked diced chicken for a complete meal.

My buddy Kris just returned from a family thing in Manti, Utah. She served this new salad recipe for the first time and said that everyone enjoyed it. I’ve found that wheat dishes are PERFECT for potluck dinners. They’re almost always better when prepared ahead of time, they travel and store well, and they add something totally new and interesting to the spread. No more frog eye salad for me. There’s a new Mayor in town!

    I’m glad you have now found it, Lindsay! This reminds me of chicken salad but without all the chicken. I did add the two cups to make it more of a meal for my family and then we took it to the gathering and everyone loved it. The potato salad was still there but this wheat berry salad was totally gone. I hope you enjoy it as much as I do. (Sorry Liesa, just couldn’t help responding:))

    i just read your bit about getting debt free and really appreciated it. my husband is just finishing medical school and we have more than our fair share of debt. i likewise tend to see the appeal to new(er) cars and nice furniture or a nice home! and yet i spend 1/2 of my time trying to get rid of so much of the stuff we already have. it’s so true that it’s liberating to save/scrimp and be successful! thanks for the reminder! do you mind if i put a link to this post on my blog? i have lots of friends in similar situations who I think would find this info helpful!

    This recipe looks delicious! I love the sweet salty combo and dried cherries are one of my all-time favorite flavors. Seems like a great recipe to introduce non-whole-grain-eaters to healthful (and delicious) wheat berries. Thanks for sharing!

    I also love that combination of flavors, Ilana. You might want to try the Fiesta Wheat and Bean Salad if your non-whole-grain-eaters like salsa. Just serve it with chips and watch them go wild. That recipe is ALWAYS a hit!
