Groovy Mashed Potatoes
Fresh Ingredients
- 2 green onions
Storage Ingredients
- 3 c. instant potato flakes
- 1 ½ c. powdered milk
- 1 tsp. salt
- ½ tsp. pepper
- 1 tsp. dry minced garlic
- 1 T. Miracle Whip (or mayonnaise)
- 1 can corn, drained
Bring 4 cups water, salt, pepper, and garlic to a boil. Turn off heat and stir in powdered milk and potato flakes. Add Miracle Whip, drained corn, diced green onion and adjust seasonings.
These potatoes don’t have any butter, sour cream, or cheese added but they taste just as good. I especially like the recipe because it gives me another covert way to use my powdered milk and canned vegetables. I’ve served them to company with Sunday pot roast and received rave reviews.

Potato Pancakes
Fresh Ingredients:
2 eggs
1/2 c grated cheese
2 T chopped chives (If you don’t have chives growing in your yard, plant some! They come back year after year and require little to no care.)
Storage Ingredients:
3 cups prepared mashed potatoes
1/2 t salt
1/8 t pepper
Oil for frying
Put all ingredients (except oil) in a bowl and mix well. Heat oil in frying pan or griddle over medium heat and spoon out potato batter to make 3-4 inch pancakes. Cook 5-7 minutes per side. Serve hot.
I just wanted to share this recipe my kids and I created to use up some leftover mashed potatoes. They’re reminiscent of hashbrowns–my kids liked theirs with ketchup. I think it would be yummy with left over Groovy Mashed Potatoes too, but I had only made plain.
